Prep time: 10 minutes. Cook time: 1 hour to 1 hour 15 minutes. Calories: 210 Servings: 2 Ingredients: • 1 Acorn Squash (Halved) • 2 TBSP Trader Joes Organic Bourbon Barrel Aged Maple Syrup • 1 TSP Cinnamon • Salt and Pepper to taste

• 1 TSP Olive Oil

Prep: -Preheat oven to 400°F -Cut Acorn Squash into halves (Be careful, this can be tricky.) -Scoop out and dispose of the seeds. -In a small bowl combine the Maple Syrup with the Olive Oil and mix well. -Drizzle even amounts of mixture onto and into each half of the acorn squash. -Sprinkle Cinnamon onto each half and add Salt/Pepper to taste. -Bake at 400°F for about 1 hour to 1 hour and 15 minutes, until the tops of the squash halves are nicely browned and the squash flesh is very soft and cooked through. -When done, remove the squash halves from the oven. Spoon any sauce that has not already been absorbed by the squash over the exposed areas. Let cool for a bit before serving. Enjoy!
